
Bunny Cake Pops
Hop into sweetness with these adorable Bunny Cake Pops made with Dole® Tropical Gold®!

Ingredients

1 package vanilla cake mix, plus ingredients called for on the box

1/2 cup white chocolate chips, or white chocolate melts

1/2 cup desiccated coconut, sweetened

10-12 wooden skewers, or lollipop sticks

Prepare the Cake: Follow the instructions on the cake mix box to bake the cake, and let it cool completely. You can bake it in a 9x9 pan or any standard cake pan. Once cooled, crumble the cake into small pieces using your hands or a fork.

Assemble the Cake Pops: Roll a small amount of cake crumbs (about 1-2 tbsp) into a ball, then gently flatten it into a small disc. Place a pineapple chunk in the center of the disc and wrap the cake around the pineapple, sealing it to create a cake ball with pineapple in the middle.
Repeat with the remaining pineapple chunks and cake. -
Prepare the White Chocolate Coating: Melt the white chocolate chips in a microwave-safe bowl, stirring every 30 seconds to prevent burning. Alternatively, use a double boiler.

Dip the Cake Pops: Insert a lollipop stick or skewer into each cake pop, then dip the entire cake pop into the melted white chocolate. Let the excess chocolate drip off. Roll the dipped cake pop immediately in desiccated coconut until fully coated. You can also sprinkle extra coconut on top for a fuller coating.

Chill: Place the finished cake pops on a tray lined with parchment paper, and chill in the fridge for 20-30 minutes to set the chocolate and cake.

Serve & Enjoy: Once the chocolate has set, you can serve the cake pops as is or dust them lightly with powdered sugar for an extra touch of sweetness.
