Pineapple Brioche French Toast with Flavored Whipped Cream Cheese
A Dole-licious twist on french toast!
Ingredients
- 1 can (15.25oz) Dole® Tropical Gold® Slices
- 1 1/4 tsp vanilla extract, divided
- 4 large egg(s)
- 1/2 cup low-fat milk
- 1/4 tsp salt
- 4 piece brioche bread
- 2 tbsp agave nectar
- 1/4 cup glazed pecans
- 3 fresh strawberries
- 1/2 cup reduced fat whipped cream cheese
Method
- Spray a large nonstick skillet generously with cooking spray and set over medium-high heat. Add the pineapple to the skillet and cook, stirring occasionally until golden in places, 6 to 7 minutes. Transfer the pineapple to a plate. Remove the skillet from the heat, wipe clean, and set aside.
- Stir cream cheese, reserved pineapple juice, and ¼ teaspoon vanilla together in a medium bowl. In a separate bowl, whisk together the eggs, milk, remaining 1 teaspoon vanilla, and salt until well combined.
- Spray skillet generously with cooking spray and set over medium heat. Working in batches, soak both sides of the bread in the egg mixture until saturated, but not falling apart. Cook the slices, turning once, 2 to 3 minutes per side, or until golden. Repeat with the remaining slices, wiping the skillet clean and applying more cooking spray between batches, if needed.
- Spread the cream cheese mixture evenly on the French toast slices, top with one slice pineapple and the pecans. Serve with fresh berries and a drizzle of agave, if desired.
