1 English cucumber(s), thinly sliced

1/2 red onion, thinly sliced

1/4 cup rice vinegar or apple cider vinegar

2 tbsp reserved pineapple juice

1 tbsp soy sauce

1 tbsp sugar or honey, adjust to taste

1/2 tsp chili flakes or chili crisp, adjust to heat level

1/2 tsp salt
-
1 tsp sesame oil, optional, for depth

1 tsp toasted sesame seeds, for garnish

Fresh cilantro or green onion, chopped
Steps to Sunshine!

Slice cucumber and red onion thinly and place in a large bowl.

Add the drained Dole pineapple tidbits to the bowl.

In a small bowl, whisk together vinegar, pineapple juice, soy sauce, sugar/honey, chili flakes, salt, and sesame oil (if using).

Pour the brine over the cucumber mixture and toss to coat. Let sit in the fridge for at least 30 minutes to let the flavors mingle. Stir once or twice for even pickling.
