  1. Slice cucumber and red onion thinly and place in a large bowl.
  2. Add the drained Dole pineapple tidbits to the bowl.
  3. In a small bowl, whisk together vinegar, pineapple juice, soy sauce, sugar/honey, chili flakes, salt, and sesame oil (if using).
  4. Pour the brine over the cucumber mixture and toss to coat. Let sit in the fridge for at least 30 minutes to let the flavors mingle. Stir once or twice for even pickling.
  5. Top with sesame seeds and chopped cilantro or green onion before serving.
