4 cup chopped kale leaves, finely sliced

1 1/2 tbsp lemon juice

1 tbsp olive oil

1/4 tsp salt

1/4 cup unsweetened shredded coconut

1/4 cup cashews, toasted and chopped

1 tbsp honey

pinch salt and pepper, to taste

Combine kale, lemon juice, olive oil and salt in large bowl. Massage kale with hands until glossy green and soft.

Stir in mango, coconut and cashews to kale; stir. Season with salt and pepper. Stir in honey.
