  1. Preheat oven to 375°F.
  2. Slice tops off peppers, scoop out seeds. Carve triangle eyes and jagged mouths to resemble Jack-O’-Lanterns.
  3. In a bowl, mix rice, beans, diced mango, cheese, taco seasoning, and salsa. Stuff peppers with mixture.
  4. Place peppers upright in a baking dish and bake 25–30 minutes until softened.
  5. Press mango chunks into the eye holes, topping with olive slices for pupils.
