Easy Upside Down Cake

You will need
- 1 can (398mL) DOLE® Pineapple Slices
- 1/4 cup butter or margarine, melted
- 2/3 cup packed brown sugar
- 8 maraschino cherries
- 1 package (432g) golden yellow cake mix
Method
- Drain pineapple slices well; reserve juice (about 2/3 cup).
- Stir together melted butter and brown sugar in 12-inch skillet with oven-safe handle. Arrange pineapple slices in sugar mixture. Place cherry in center of each pineapple slice.
- Prepare cake mix according to package directions, using reserved juice and add water to equal amount of water called for on package. Pour batter evenly over pineapple.
- Cool 5 minutes. Loosen edges and invert onto serving platter.

Bake at 350°F for 35 to 40 minutes or until toothpick inserted in center comes out clean.
Note: Cake can be baked in 13 x 9-inch baking pan instead of skillet. Baking time may need to be adjusted. Test cake in center; toothpick should come out clean.
