You will need

  • 1 can (398mL) DOLE® Pineapple Slices
  • 1/4 cup butter or margarine, melted
  • 2/3 cup packed brown sugar
  • 8 maraschino cherries
  • 1 package (432g) golden yellow cake mix

Method

  1. Drain pineapple slices well; reserve juice (about 2/3 cup).
  2. Stir together melted butter and brown sugar in 12-inch skillet with oven-safe handle. Arrange pineapple slices in sugar mixture. Place cherry in center of each pineapple slice.
  3. Prepare cake mix according to package directions, using reserved juice and add water to equal amount of water called for on package. Pour batter evenly over pineapple.
  4. Cool 5 minutes. Loosen edges and invert onto serving platter.
  5. Bake at 350°F for 35 to 40 minutes or until toothpick inserted in center comes out clean.


    Note: Cake can be baked in 13 x 9-inch baking pan instead of skillet. Baking time may need to be adjusted. Test cake in center; toothpick should come out clean.
