Citrus Green Salad

You will need
- 1 can (398mL) DOLE® Pineapple Chunks
- 1 pkg (340g) mixed green salad blend
- 1 tbsp grated orange peel
- 1 orange, peeled, halved and sliced
- 1/2 cup halved and sliced red onion
- 1 cup chopped nuts, toasted
- 1/2 cup crumbled feta cheese
- 2 tbsp vegetable oil
- 2 tbsp balsamic or red wine vinegar
Method
- Drain pineapple chunks, reserve 1/4 cup of the juice.
- In large bowl, combine pineapple chunks, salad blend, sliced orange, onion, nuts and feta; set aside.
- In small bowl, stir together reserved juice, orange peel, oil and vinegar. Pour over salad just before serving; toss to evenly coat.
