Lamb Chops with Pineapple-Mint Chimichurri

Ingredients

4 lamb chops

Handful mint and parsley, chopped

1 garlic clove, minced

2 tbsp olive oil

1 tsp vinegar

salt & pepper
Steps to Sunshine!

Mix chimichurri ingredients and let sit.

Lightly oil and grill the pineapple slices until golden.

Grill or pan-fry lamb chops for 3 mins on each side.

Spoon over the chimichurri.

Serve with grilled courgette or mash.
